Kokk, alltid kokk – Fagtradisjon, uniformering og dannelse av identitet

Abstract

Denne masteravhandlingen er en del av studiet Master i fag- og yrkesdidaktikk ved NTNU, og bygger på et feltarbeid gjort ved kokkelinja ved Restaurant og matfag på en videregående skole i Midt- Norge. Det er gjort et litteraturstudie for å lage et historisk og kulturelt bakteppe med hensikt å plassere kokkeuniformen i riktig kontekst.

Kokkens uniform er ikonisk, og har lang historie som har preget fagtradisjonen hvordan kokkens fagidentitet har blitt dannet. Informanter som arbeider som yrkesfaglærere med bakgrunn i kokkefaget på mesternivå har deltatt i forskingsprosjektet.

Problemstillingen som danner utgangspunktet for studien er følgende: Hvordan former fagtradisjonen knyttet til kokkeuniformen kokkene?

Oppgavens teoretiske forankring bygger på Etienne Wenger og hans teorier om læring i praksisfelleskaper. Det ble valgt kvalitativ metode for å besvare masteravhandlingens problemstilling, med observasjon og intervju.

Studiet viste at det er en sterk kultur for bekledning i form av kokkeuniform i faget, og at kokkene viderefører denne i gjennom mesterlære og overføring av uniformens tause kunnskap.

This master thesis is part of the study: master of subject and vocational didactics at NTNU, and is based don a fieldwork carried out at a upper secondary school in the department of restaurant and culinary arts. A literature study was carried out in order to set a cultural and historical background to place the chef uniform in the right context.

The chef uniform is iconic, and its long history has set its mark on the vocational tradition and how a cooks vocational identity has been made. The informants whom have their occupation as teachers with a background as trained cooks up the level of a master craftsman, have participated in the study.

The following research question was created for this study: How does the trades traditions considering the chef uniform participate in the creation of the cooks?

The theory of this thesis is founded on the theories of Etienne Wenger and his works on communities of practice. Qualitative methodology was used in order to get answers to solve the research question, with a focus on observation and interview.

The study did show a strong culture of dressing in the cook uniform, and that the cooks passes on this through their mastery learning, and through the silent knowledge of the uniform.
