Denne masteroppgaven ser på kombinasjonen av produksjonsplanlegging, matproduksjonsindustrien og modellering.Den fokuserer på to hovedspørsmål: hva er utfordringene av produksjonsplanlegging i matproduksjonsindustrien, og på hvilke måter kan modellering brukes til å støtte produksjonsplanlegging i matproduksjonsindustrien.
Oppgaven forsøker å besvare disse spørsmålene med en kombinasjon av et litteraturstudie og en casestudie av Brynild, en norsk matvareprodusent.
Oppgaven fant flere utfordringer relatert til produksjonsplanlegging i matproduksjonsindustrien, og delte disse i tre kategorier: de generelle utfordringene av produksjonsplanlegging i teorien, utfordringer som stammer fra kompiserende karakteristikker ved matvareproduksjon, og utfordringer relatert til den praktiske siden av produksjonsplanlegging.Den fant også to hovedkategorier for bruksområder av modellering: direkte nytte fra bruken av modeller i løsningen av produksjonsplanleggingsproblemer, og en mer iboende nytte fra selve modelleringsprosessen, for eksempel ved bruk av en konseptuell modell som dokumentasjon.
Hovedbegrensningene er som følger: casestudiet er begrenset i omfang til ett produksjonsstadie i én bedrift, så det er en mulighet for at resultatene ikke generaliserer seg; grunnet den ustrukturerte måten litteraturstudiet ble gjennomført på kan ikke dens funn erklær som en komplett liste; på grunn av mangelen på nødvendig data og tid ble hverken simulering eller implementering av anbefalningene til casestudiet utført.
Verdien i oppgaven ligger i de ovennevnte resultatene, i de direkte anbefalningene den gir til case-bedriften og dens anbefalninger for videre arbeid.Spesielt presenterer den begynnelsen på et nyskapende rammeverk for prioriteringen av parametere for produksjonsplanleggingsmodeller, som er anbefalt for videre arbeid. The thesis considers the intersection of production scheduling, the food processing industry and modelling.In particular, it focuses on two key questions: what are the challenges of scheduling in the food processing industry, and in what ways can modelling be used to support scheduling in the food processing industry. \\
The thesis attempts to answer these questions using a combination of literature study and a case study of Brynild, a Norwegian manufacturer in the food processing industry.
The research found several challenges related to production scheduling in food processing, and divided these into three categories: the general challenges of scheduling in theory, challenges stemming from complicating characteristics within the food processing industry, and challenges related to the practical side of production scheduling.It also found two major categories for the use cases of modelling: direct utility from the utilization of models in the solving of scheduling problems, and more intrinsic utility from the act of modelling itself, such as the use of a conceptual model as documentation.
Key limitations are as follows: the case study is scoped to a singular production stage of a singular company, so results may not generalize; due to the unstructured nature of the literature study, its findings regarding the challenges of scheduling is not a complete, comprehensive list; due to the lack of both data and time, neither simulation nor implementation of recommendations could be carried out in the case study.
The value of the study lies in its aforementioned findings, in the direct recommendations it provides for the case company, and its recommendations for further work.In particular, a novel framework for the prioritization of model parameters was theorized, which is recommended for further study.
