Sammendrag
Hensikten med denne bacheloroppgaven var å finne ut hvordan tilsetning av ulike konsentrasjoner av ulike bladpulver i glutenfritt brød ville påvirke antioksidantinnholdet og de fysiske egenskapene, samt graden av aksept hos forbrukere.
Pulver av spinat (Spinacia oleracea), brennesle (Urtica dioica) og grønnkål (Brassica oleracea var. sabellica) ble tilsatt i konsentrasjoner på 1% og 3%, og vurdert opp mot et kontrollbrød uten tilsetning av bladpulver. De fysiske egenskapene som ble analysert var tekstur, farge, vanninnhold, vektsvinn, volum og porøsitet. For å undersøke antioksidantinnhold ble det gjennomført analyse av antioksidantaktivitet, totalt innhold av fenolforbindelser (TPC) og askorbinsyre. Det ble gjennomført en forbrukertest for å undersøke grad av aksept.
Resultatene fra de fysiske analysene viste at tilsetning av bladpulver utgjorde noen signifikante endringer, blant annet høyere vanninnhold og endring i farge. Tilsetning av spinatpulver resulterte i hardere tekstur, høyere porøsitet, samt lavere vektsvinn og volum. Tilsetning av brenneslepulver resulterte i økt hardhet, lav spenstighet og volum, samt endring av porøsitet. Tilsetning av grønnkålpulver resulterte i mykere tekstur, økning av volum og høyere porøsitet.
De kjemiske analysene viste at tilsetning av spinatpulver ikke bidro til noen signifikant økning i antioksidantinnhold. Tilsetning av brenneslepulver ga høyest antioksidantaktivitet, men kun en liten økning i TPC og mengde askorbinsyre. Tilsetning av grønnkålpulver ga ingen signifikant økning i TPC, men ga økt antioksidantaktivitet og inneholdt mest askorbinsyre av alle brødene.
Resultatene fra forbrukertesten viste at brødet tilsatt 3% grønnkål hadde høyeste grad av aksept på egenskapene farge, tekstur og helhetlig inntrykk. Derimot hadde kontrollbrødet høyest grad av aksept på egenskapene smak og aroma.
Det ble konkludert med at tilsetning av brennesle- og grønnkålpulver ga økt antioksidantinnhold og medførte signifikante endringer i fysiske kvaliteter og grad av aksept. Tilsetning av spinatpulver medførte derimot en negativ innvirkning på de fysiske- og kjemiske kvaliteter, med unntak av vanninnhold og vektsvinn, samt dårligere grad av aksept. The purpose of this bachelor thesis was to find out how the addition of different leaf powders in different concentrations in gluten-free bread would affect its antioxidant content and physical properties, as well as its degree of acceptance by consumers.
Powders of spinach (Spinacia oleracea), nettle (Urtica dioica) and kale (Brassica oleracea var. Sabellica) were added in concentrations of 1% and 3% and compared against a control sample without leaf powder. The samples underwent antioxidant activity, total phenolic content (TPC) and ascorbic acid testing methods to determine their antioxidant content. The physical properties analysed were texture, colour, water content, baking loss, volume, and porosity. A consumer test was conducted to examine the degree of acceptance.
The results from the physical analyses showed that the addition of leaf powder constituted some significant changes, including higher water content and change in colour. The addition of spinach powder resulted in a harder texture, higher porosity, lower baking loss and volume. The addition of nettle powder increased hardness, lowered springiness, and decreased volume, as well as changes in porosity. The addition of kale powder led to softer texture and increase in both volume and porosity.
The chemical analyses showed that spinach powder did not contribute to any significant increase in antioxidant content. The addition of nettle powder resulted in the highest antioxidant activity, and a minor increase in TPC and ascorbic acid. The addition of kale powder did not receive a significant increase in TPC but showed increased antioxidant activity and contained the most ascorbic acid of all the breads.
The results from the consumer test showed that the addition of 3% kale powder gave the bread with the highest rate of acceptability of colour, texture, and overall impression. The control bread had the highest rate of acceptability on taste and aroma.
It can be concluded that the addition of nettle and kale powders to bread leads to increase in antioxidant content, few significant changes of physical qualities and acceptability. Addition of spinach powder however had a negative effect on most physical and chemical qualities, apart from moisture content and baking loss, as well as a poor degree of acceptance.
