dc.description.abstractEnzymatisk hydrolyse av restråstoff fra fisk gir fiskeproteinhydrolysat (FPH) som har funksjonelle egenskaper som er egnet for matindustrien. Målet med denne oppgaven var å studere endringer i egenskaper til FPH tilsatt antioksidanter gjennom lagring. FPH ble produsert fra regnbueørrethoder (Oncorhynchus mykiss) og ble tilsatt BHT, propylgallat, sitronsyre og askorbinsyre for å studere hvordan de påvirket endringer gjennom lagring to, fire og seks måneder. Alle hydrolysatene inneholdt en høy andel vannløselige proteiner som bidro til høy løselighet. Mengden vannløselige proteiner ble noe redusert etter lagring i seks måneder. Spaltingen av peptidbindingene under hydrolysen førte til en økt %DH og økt mengde syreløselige peptider, frie aminogrupper og frie aminosyrer. Tiolkonsentrasjonene i FPH ble redusert under lagringsperioden. Etter lagring i seks måneder var tiolkonsentrasjonene omtrent like for alle hydrolysatene som indikerer proteinoksidasjon og at antioksidantene var brukt opp. Det ble ikke observert store endringer i sammensetningen av aminosyrer, som indikerer at antioksidantene ikke hadde noen effekt på den totale aminosyresammensetningen. Det totale proteininnholdet varierte mellom 82-85 vekt% i hydrolysatene. Molvektsfordelingene for hydrolysatene som ikke ble lagret lignet molvektsfordelingene for hydrolysatene som ble lagret seks måneder, som indikerer at antioksidantene motvirket nedbrytning av peptidene under lagring. Hydrolysatene ble mørkere, rødere og gulere under lagringsperioden. Propylgallat var best til å ivareta kjemiske og funksjonelle kvalitetsparametere, mens askorbinsyre var dårligst.
dc.description.abstractEnzymatic hydrolysis of rest raw-materials from fish yields fish protein hydrolysates (FPH) which have functional abilities well suited for the food industry. The aim of this thesis was to study the changes in the properties of FPH added antioxidants throughout storage. The FPHs were produced from rainbow trout heads (Onchorhynchus mykiss) and were added BHT, propyl gallate, citric acid and ascorbic acid. The FPHs were analyzed after storage two, four and six months. All the hydrolysates contained a high amount of water soluble proteins contributing to high solubility. A slight decrease was observed for the amount of water-soluble proteins after six-month storage. The cleavage of peptide bonds during hydrolysis yielded an increased %DH and an increased amount acid-soluble peptides, free amino groups and free amino acids. The thiol-concentrations in FPH were reduced during storage. After six-month storage, the thiol-concentration was roughly the same for all hydrolysates indicating protein oxidation and that the antioxidants were used up. No significant changes were observed in the amino acid content indicating that the antioxidants had no effect on the total amino acid content. Total protein content varied between 82-85 weight% in the hydrolysates. Molecular weight distributions for the hydrolysates that was not stored compared to the molecular weight distributions for hydrolysates stored six months indicated that the antioxidants counteracted decomposition of the peptides during storage. The hydrolysates became darker, redder and more yellow during storage. Propyl gallate was found to be best to preserve chemical and functional quality parameters whereas ascorbic acid was found to have the smallest effect.
