dc.description.abstractBakgrunnen for bacheloroppgaven var å se på muligheten for reduksjon av formodningstid ved tilsats av CO2 i ystemelka til Camembertproduksjon. Det ble ystet Camembert tre ganger over tre uker, hvorav første og tredje produksjon ble utført med et referansekar og et kar tilsatt CO2 i ystemelka, begge tilsatt brukssyre. Andre produksjon ble ystemelka i begge karene tilsatt CO2, med brukssyre i det ene og DVS i det andre. Alle ostene ble lakesaltet og satt i modningsskap på dag to. Det ble utført mikrobiologiske analyser, enterobacteriaceae og totalkim, på upasteurisert-, pasteurisert melk og myse. Da ostene hadde fått heldekkende mugglag på overflaten, ble de veid og pakket, deretter satt i klimaskap ved 10 °C. Uke 4 ble ostene satt i kjøleskap ved 4 °C. Det ble utført triangeltest to ganger, der Camembert referanse ble testet mot Camembert ystet med CO2. Ostene ble sendt til kjemisk analyse på TINE Dovre. Kvalitetskontroll ble utført av ostedommere ved TINE Dovre. pH synker etter forsyrning, og det er kraftig nedgang mellom måling av pH i koagel, til fersk ost (dag 2) i alle ostene, bortsett fra CO2 DVS 20.03. pH holder seg relativt stabil fram til dag 5, og synker svakt fra dag 5 til 9. pH starter å øke fra dag 10, og har kraftig stigning etter uke 3 i alle ostene. Fett % holder seg under maksimumsverdien på 28 %, bortsett fra CO2 DVS 20.03. Osten avviker fra kravene til tørrstoff, bortsett fra CO2 DVS 20.03. F/T % ligger ikke innenfor grenseverdier i noen av ostene. Saltinnholdet er innenfor minimum og maksimumsgrense for Camembert med 25 % fett. Osteutbytte ble beregnet til 15,8 og 16,8 i første produksjon, 14,1 og 12,8 i andre produksjon og 11,6 og 11,7 i tredje produksjon. Ved første triangeltest ble H0 forkastet med en sikkerhet på 90 %, og ved andre triangeltest ble H0 forkastet med en sikkerhet på 80 %. Ingen formodning i Camembert tilsatt CO2 ble oppnådd. Camembert produsert med CO2 gir en annerledes ost enn referanse, men TINE Dovre bedømte ostene fra andre og tredje produksjon til salgsvare. Dommerne ved sensorisk analyse merket forskjell på modningsgrad, men dette er ikke nødvendigvis en negativ konsekvens av CO2.
dc.description.abstractThe background for the bachelor was to look at the possibility to reduce the pre-acidification time by adding CO2 to the cheese milk. Cheese manufacture was repeated on three different days, of which the first and third production was performed with one reference vat and one vat where CO2 was added to the cheese milk. In the second production CO2 was added to both vats, but one vat with pre-produced starter culture and the second vat with DVS (direct vat set). The cheeses were salted and put in maturing cabinets on day two. Microbiological analysis, enterobacteriaceae and total count, were performed on unpasteurized milk, pasteurized milk and whey. After 8-10 days a white bloomy rind, caused by a white fungus, called Penicillium candidum, covered the cheeses. The weight of the cheeses was controlled, they were packed in a special paper and stored in a climatic chamber at 10 °C for 2 weeks and in a refrigerator for the final ripening. Triangle test were preformed twice, where Camembert reference was tested against Camembert using CO2. The cheeses were sent for chemical analysis at TINE Dovre. Quality control was conducted by cheese judges at TINE Dovre. The pH drops after addition of CO2, and there is a sharp decrease between the measurement of pH in clot, to fresh cheese (day 2) in all the cheeses, except for CO2 DVS 20.03. The pH stays relatively stable until day 5 and drops slightly from day 5 to 9. The pH starts to increase from day 10 and has a sharp rise after week 3 in all cheeses. Fat % stays below the maximum value of 28 %, except for CO2 DVS 20.03. The cheese differs from the requirements for dry matter, except for CO2 DVS 20.03. F/T % is not within limits in any of the cheeses. The salt content is within the minimum and maximum limit for Camembert with 25 % fat. Cheese yield was calculated at 15.8 and 16.8 in first production, 14,1 and 12,8 in second production and 11,6 and 11,7 in third production. At the first triangle test, H0 was rejected with a significance of α = 0,1, and for the other triangle test, H0 was rejected with a significance of α = 0,2. The pre-acidification time was zero since the starter culture was added at the same time as the rennet due to the reduction of pH caused by CO2. Cheese produced with CO2 gives a different cheese than reference, but TINE Dovre gave the cheeses a good score and accepted them as products for the marked. Comments from the judges on the triangle tests indicate that there was a significant difference in the degree of maturation of the cheeses. This is not necessarily a negative consequence of CO2.
